Recipe : Keto Chewy Chocolate Chip Cookies



   Its cookie time! Cookie , cookie, cookie... shut out for cookies! Cookies what a lovely snack in free time, but it contain high carb hmmm...Now you guys dont have to worry about carb on cookies, cause today recipe is low carb cookies and absolutely became love at the first bite! Now lets make your own!


Prep Time : 10 minutes
Cook Time : 8 minutes
Yields : 12 cookies
Ingredient :
  1. 2 eggs
  2. 1 tsp pure vanilla extract 
  3. 1/3 cup granulated erythritol or other low-carb sweetener
  4. 1/4 cup (1/2 stick) unsalted butter, ghee or coconut oil(softened)
  5. 1/3 cup plus 3 tsp coconut flour
  6. 1 tbsp unflavored grass-fed beef gelatin 
  7. 1/2 tsp baking soda
  8. Pinch of fine Himalayan salt
  9. 1 (4-ounce) bar stevia-sweetened semisweet baking chocolate, finely chopped, or ½ cup stevia-sweetened semisweet chocolate chips 
How To Make :
  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk the eggs with a fork or wire whisk until frothy. Add the vanilla extract, erythritol, and fats and whisk till nicely blended.
  3. Add the coconut flour, gelatin, baking soda, and salt to the wet ingredient. Use  a rubber spatula, blend the substances together until the dough forms.
  4. Fold the chopped chocolate into the dough.
  5. Use medium-sized cookie scoop or a tablespoon. Scoop up a mounded tablespoon of the dough and shape it into a 1-inch ball. Repeat with the rest of the dough. Place the dough balls at the coated baking sheet, 2 inches apart. (You should have  twelve cookie.)
  6. Using the palm of your hand, gently flatten the balls so they are approximately ½ inch thick. Bake for 8 to 10 mins, until the edges are lightly browned.
  7. remove the cookies from the oven and let them cool to room temperature at the baking sheet earlier than coping with. The more they cool, the chewier they'll be. Store in an airtight box at room temperature for up to 5 days.
